Ingredients
  

For the Burritos:

1 lb ground beef (or shredded chicken)

1 cup cooked rice (white or brown)

1 can (15 oz) black beans, drained and rinsed

1 cup shredded cheese (cheddar or Monterey Jack)

½ cup diced onion

2 cloves garlic, minced

1 tbsp olive oil

1 tsp cumin

1 tsp chili powder

Salt and pepper to taste

4 large flour tortillas

For the Green Chili Sauce:

2 cups green chilies (fresh, roasted, or canned)

1 cup chicken or vegetable broth

1 cup heavy cream

1 tsp oregano

1 clove garlic, minced

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Prepare the Filling:

    - In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until translucent (about 3-4 minutes).

      - Add the ground beef (or chicken) to the skillet. Cook until browned, breaking it apart with a spatula. Drain excess fat if needed.

        - Stir in the cumin, chili powder, salt, and pepper. Mix in the cooked rice and black beans, combining thoroughly. Remove from heat.

          Make the Green Chili Sauce:

            - In a saucepan, combine the green chilies, chicken broth, heavy cream, oregano, minced garlic, salt, and pepper. Bring the mixture to a simmer over low heat. Allow it to thicken slightly (about 5-7 minutes). Adjust seasoning to taste.

              Assemble the Burritos:

                - Lay out each flour tortilla on a flat surface. Spoon an equal portion of the filling onto each tortilla, top with a sprinkle of shredded cheese, then fold in the sides and roll tightly from one end to the other.

                  Smother the Burritos:

                    - Preheat your oven to 375°F (190°C). Place the burritos seam-side down in a greased baking dish. Pour the warm green chili sauce evenly over the top of the burritos. Sprinkle remaining cheese on top.

                      Bake:

                        - Cover the baking dish with aluminum foil and bake for about 20 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.

                          Serve:
