Ingredients

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ cup unsalted butter, softened

1 cup granulated sugar, plus extra for topping

2 large eggs

1 tsp vanilla extract

½ cup sour cream

1 tsp cream of tartar

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and cream of tartar until well combined. Set aside.

Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and 1 cup of granulated sugar together using an electric mixer until light and fluffy, about 3-4 minutes.

Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract.

Combine with Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients. Mix just until no flour is visible—be careful not to overmix.

Fold in Sour Cream: Gently fold in the sour cream until the batter is smooth and creamy.

Prepare for Baking: Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.

Cinnamon Sugar Topping: In a small bowl, combine 2 tablespoons of granulated sugar with 1 tablespoon of ground cinnamon. Sprinkle this mixture generously over the tops of each muffin.

Bake the Muffins: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.

Cool Down: Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Enjoy: Serve warm or at room temperature. Enjoy your delightful Snickerdoodle Muffins with a cup of coffee or tea!
