Ingredients

1 lb (450g) pork tenderloin, thinly sliced

2 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon oyster sauce

1 tablespoon honey

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 bell pepper, sliced (red or green)

1 medium onion, sliced

1 cup pineapple chunks (fresh or canned)

3 cloves garlic, minced

1 teaspoon ginger, grated

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Salt and pepper to taste

Instructions

In a bowl, combine sliced pork, soy sauce, rice vinegar, oyster sauce, honey, and cornstarch. Mix well and let marinate for at least 15 minutes.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated pork and stir-fry until cooked through and slightly caramelized, about 5-7 minutes. Remove the pork from the skillet and set aside.

In the same skillet, add the remaining tablespoon of oil. Sauté the onion, bell pepper, garlic, and ginger for about 3-4 minutes, until the vegetables are tender but still vibrant.

Add the pineapple chunks to the skillet and stir to combine. Cook for another 2 minutes, allowing the flavors to meld.

Return the cooked pork to the pan, mixing everything together. Season with salt and pepper to taste. Cook for an additional 2 minutes to heat everything through.

Remove from heat and garnish with chopped green onions and a sprinkle of sesame seeds.

Serve hot with steamed rice or noodles.
