3 large sweet potatoes, peeled and cubed

1/2 cup maple syrup

1/4 cup unsalted butter, melted

1/2 cup brown sugar, packed

1/2 cup milk (or almond milk for dairy-free)

2 large eggs

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon salt

1 cup pecans or walnuts, chopped (optional)

1 cup mini marshmallows (optional, for topping)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Boil the Sweet Potatoes: In a large pot, add the cubed sweet potatoes and cover them with water. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain and let cool slightly.

      Mash the Sweet Potatoes: In a large mixing bowl, mash the sweet potatoes until smooth, then add in the melted butter, maple syrup, brown sugar, milk, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix thoroughly until all ingredients are well-combined and smooth.

        Transfer to Baking Dish: Pour the sweet potato mixture into a greased 9x13-inch baking dish, spreading it evenly.

          Add Toppings: If you’re using nuts, sprinkle them evenly over the sweet potato mixture. For a sweet finish, scatter mini marshmallows on top.

            Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and the marshmallows (if using) are toasted.
