Spinach & Ricotta Lasagna Roll-Ups

9 lasagna noodles

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup grated mozzarella cheese, divided

½ cup grated Parmesan cheese

1 large egg

2 cups marinara sauce

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Noodles: Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and rinse them under cold water to prevent sticking. Lay them out flat on a clean kitchen towel.

      Prepare the Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, ½ cup mozzarella cheese, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.

        Assemble the Roll-Ups: Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Take a cooked lasagna noodle, spoon about 3 tablespoons of the ricotta mixture onto it, and carefully roll it up from one end to the other. Place the roll seam-side down into the baking dish. Repeat with remaining noodles.

          Add Sauce and Cheese: Once all the roll-ups are placed in the dish, pour the remaining marinara sauce over the top of the roll-ups. Sprinkle the remaining mozzarella cheese over everything.

            Bake: Cover the dish with aluminum foil and bake for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

              Garnish and Serve: Once baked, remove from the oven, let it sit for 5-10 minutes, then garnish with fresh basil leaves if desired. Serve warm and enjoy the deliciousness of your Spinach & Ricotta Lasagna Roll-Ups!
