2 cups cooked jasmine rice

1 lb boneless, skinless chicken thighs (or breasts)

1 can (15 oz) sweet corn, drained

1 red bell pepper, diced

2 green onions, sliced

½ cup cotija cheese, crumbled (or feta)

1 avocado, sliced

2 tbsp mayonnaise

1 tbsp sour cream

1 tbsp lime juice

1 tsp chili powder

1 tsp garlic powder

1 tsp smoked paprika

Salt and pepper to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Chicken: In a bowl, combine chicken thighs, chili powder, garlic powder, smoked paprika, salt, and pepper. Mix well to coat the chicken evenly.
