Ingredients

2 lbs chicken drumsticks

1/2 cup soy sauce

1/4 cup brown sugar

1/4 cup honey

2 tablespoons sesame oil

4 cloves garlic, minced

1 tablespoon ginger, freshly grated

2 tablespoons rice vinegar

1 tablespoon gochujang (Korean red chili paste)

1 teaspoon black pepper

1 tablespoon sesame seeds (for garnish)

2 green onions, sliced (for garnish)

Instructions

Prepare the Marinade: In a large bowl, combine soy sauce, brown sugar, honey, sesame oil, minced garlic, grated ginger, rice vinegar, gochujang, and black pepper. Whisk until sugar is dissolved and ingredients are well-combined.

Marinate the Chicken: Add the chicken drumsticks to the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top. This will help the chicken cook evenly and allow excess fat to drain away.

Arrange the Chicken: Remove drumsticks from the marinade, allowing excess marinade to drip off, and place them on the wire rack. Reserve the remaining marinade for basting.

Bake the Drumsticks: Bake the chicken drumsticks in the preheated oven for 35-40 minutes, turning them halfway through. Baste them with the reserved marinade every 10 minutes for added flavor and moisture.

Broil for Crispiness: Once the chicken reaches an internal temperature of 165°F (74°C), switch your oven to broil for an additional 3-5 minutes, or until the drumsticks are golden and slightly crispy.

Serve: Remove from the oven and let them rest for a few minutes. Garnish with sesame seeds and sliced green onions before serving.
