Ingredients

2 salmon fillets (6 oz each)

1/4 cup soy sauce

2 tbsp honey

1 tbsp rice vinegar

1 tbsp sesame oil

1 tsp minced garlic

1 tsp minced ginger

1 cup jasmine rice, rinsed

2 cups water

1 cup steamed broccoli florets

1 cup shredded carrots

1 avocado, sliced

2 green onions, chopped

Sesame seeds for garnish

Sea salt and black pepper to taste

Instructions

Prepare the Teriyaki Marinade: In a bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, and minced ginger until combined.

Marinate the Salmon: Place the salmon fillets in a shallow dish and pour half of the teriyaki marinade over them, ensuring they are well coated. Let them marinate for at least 15 minutes.

Cook the Rice: In a medium saucepan, combine the rinsed jasmine rice with 2 cups of water and a pinch of sea salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed. Remove from heat and let sit for 5 minutes before fluffing with a fork.

Cook the Salmon: Preheat a grill or skillet over medium-high heat. Remove the salmon from the marinade and cook for about 5-6 minutes on each side or until the salmon flakes easily with a fork. Brush with the remaining marinade while cooking for added flavor.

Assemble the Bowls: In serving bowls, place a generous scoop of jasmine rice as the base. Top with steamed broccoli, shredded carrots, and sliced avocado. Add the grilled teriyaki salmon on top.

Garnish: Drizzle any remaining teriyaki sauce over the bowls, then sprinkle with chopped green onions and sesame seeds. Add salt and pepper to taste.

Serve: Enjoy your delicious and colorful teriyaki salmon bowls, full of nutrients and flavor!
