Ingredients
  

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) corn (with liquid)

1 can (14.5 oz) diced tomatoes (with green chilies for extra spice)

1 packet taco seasoning (or homemade mix)

4 cups beef or chicken broth

1 can (8 oz) tomato sauce

1 bell pepper, diced (any color)

1 tsp cumin

1 tsp paprika

Salt and pepper to taste

Optional toppings: shredded cheese, sour cream, chopped green onions, cilantro, avocado, tortilla chips

Instructions
 

In a large pot or Dutch oven, over medium heat, cook the ground beef or turkey until browned. Drain excess fat if necessary.

    Add the diced onion and bell pepper to the pot, cooking for about 5 minutes until they soften.

      Stir in the minced garlic and cook for about 1 minute until fragrant.

        Pour in the black beans, kidney beans, corn (with liquid), diced tomatoes (including their juice), and tomato sauce.

          Sprinkle in the taco seasoning, cumin, paprika, and stir well to combine all ingredients.

            Add the broth to the pot, bringing everything to a boil over high heat.

              Once boiling, reduce heat to low, cover the pot, and simmer for 30 minutes, stirring occasionally for flavors to meld.

                Taste and adjust seasoning with salt and pepper as needed.

                  Serve hot in bowls and let everyone top their soup with their choice of toppings like shredded cheese, sour cream, green onions, cilantro, avocado, and tortilla chips for added crunch.
