Ingredients

1 cup wild rice blend

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

8 ounces mushrooms, sliced (cremini or button)

1 teaspoon dried thyme

1 teaspoon dried parsley

6 cups chicken broth

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup heavy cream (or coconut milk for a lighter option)

Salt and pepper to taste

Fresh parsley, for garnish

Instructions

Prepare the Wild Rice: Rinse the wild rice blend under cold water. In a medium saucepan, combine wild rice with 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for about 45 minutes or until tender. Drain and set aside.

Sauté the Vegetables: In a large pot, heat olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Add minced garlic, diced carrots, and celery. Cook for another 5-7 minutes until the vegetables are softened.

Add Mushrooms: Stir in the sliced mushrooms, dried thyme, and parsley. Cook for 5-6 minutes until the mushrooms have released their moisture and are tender.

Combine Ingredients: Pour in the chicken broth and bring the mixture to a boil. Reduce heat to low and stir in the cooked wild rice and shredded chicken. Allow the soup to simmer for about 10-15 minutes, letting the flavors meld.

Add Cream: Slowly stir in the heavy cream, mixing well. Season with salt and pepper to taste. Let the soup simmer for an additional 5 minutes, then remove from heat.

Serve: Ladle the soup into bowls and garnish with freshly chopped parsley. Serve hot and enjoy the cozy flavors!
