Ingredients
  

4 tilapia fillets

2 red bell peppers

1 yellow bell pepper

3 cloves garlic, minced

1 medium onion, finely chopped

1 cup vegetable broth

1 teaspoon paprika

1 teaspoon dried oregano

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley for garnish

Lemon wedges for serving

Instructions
 

Roasting the Peppers:

    - Preheat the oven to 400°F (200°C).

      - Place the red and yellow bell peppers on a baking sheet and roast them in the oven for about 25 minutes, turning halfway through, until the skin is blistered and charred.

        - Remove the peppers from the oven and let them cool. Once cool, peel off the skin, remove the seeds, and slice them into strips.

          Prepare the Sauce:

            - In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

              - Add minced garlic and cook for an additional 1-2 minutes, stirring frequently.

                - Stir in the roasted pepper strips, vegetable broth, paprika, oregano, salt, and pepper. Bring to a simmer and let it cook for about 10 minutes, allowing the flavors to meld.

                  Cook the Tilapia:

                    - While the sauce is simmering, season the tilapia fillets with salt and pepper on both sides.

                      - In another skillet, heat a bit of olive oil over medium-high heat. Add the seasoned tilapia fillets and cook for about 3-4 minutes on each side until they are golden brown and cooked through.

                        Combine and Serve:

                          - Once the tilapia is cooked, carefully place the fillets in the skillet with the roasted pepper sauce. Spoon the sauce over the fish and let it cook together for an additional 2 minutes.

                            - Remove from heat and garnish with fresh parsley. Serve with lemon wedges on the side for a refreshing zing.
