4 large Granny Smith apples, peeled, cored, and sliced

1 cup granulated sugar

1 cup light brown sugar, packed

1/2 cup unsalted butter

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

Juice of 1 lemon

1 tablespoon cornstarch

1 tablespoon water

2 ready-made pie crusts (or homemade if preferred)

1 egg, for egg wash

Toffee bits for topping (optional)

Prepare the Apples: In a large mixing bowl, toss the sliced apples with lemon juice, granulated sugar, brown sugar, cinnamon, nutmeg, cornstarch, and water. Set aside for at least 30 minutes to allow the flavors to meld and the apples to soften slightly.

    Make the Toffee Sauce: In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar and vanilla extract, cooking until the mixture comes to a gentle boil. Allow it to simmer for 3-4 minutes until it thickens slightly. Remove from heat.

      Assemble the Pie: Preheat your oven to 425°F (220°C). Roll out one pie crust and place it in a 9-inch pie dish. Fill it with the apple mixture, ensuring that the apples are piled high. Drizzle the warm toffee sauce over the apples for added sweetness.

        Top the Pie: Roll out the second pie crust and either lay it over the filled pie or cut it into strips for a lattice top. If using the full crust, make slits for steam to escape. Brush the top crust with a beaten egg for a golden finish.
