Ingredients
  

2 large chicken breasts, thinly sliced

1 tablespoon olive oil

1 medium onion, sliced

1 medium green bell pepper, sliced

1 medium red bell pepper, sliced

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

4 slices provolone cheese (or your cheese of choice)

4 sub rolls (hoagie or baguette style)

Optional toppings: sautéed mushrooms, jalapeños, or hot sauce

Instructions
 

Prepare the Chicken: In a large bowl, season the thinly sliced chicken breasts with salt, pepper, and Italian seasoning. Make sure the chicken is well coated.

    Sauté the Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the sliced onion and bell peppers. Sauté for about 5-7 minutes until they start to soften. Add the minced garlic and cook for an additional minute until fragrant. Transfer the cooked vegetables to a plate and set aside.

      Cook the Chicken: In the same skillet, add the seasoned chicken slices. Cook for about 5-6 minutes, stirring occasionally, until the chicken is cooked through and no longer pink.

        Combine and Melt Cheese: Return the sautéed vegetables back to the skillet with the cooked chicken. Stir everything together and cook for another 2 minutes. Place the provolone cheese slices on top of the chicken and vegetable mixture. Cover the skillet with a lid and allow the cheese to melt for about 2-3 minutes.

          Prepare the Rolls: While the cheese is melting, slice the sub rolls in half lengthwise (without cutting all the way through) and lightly toast them in a separate pan or oven if desired.

            Assemble the Cheese Steaks: Once the cheese has melted, remove the skillet from the heat. Use a spatula to scoop the cheesy chicken and vegetable mixture into the toasted rolls.
