For the Dough:

2 ripe bananas, mashed

1 cup almond milk (or any plant-based milk)

1/4 cup coconut oil, melted

1/3 cup maple syrup or agave nectar

3 cups all-purpose flour (plus extra for dusting)

2 1/4 teaspoons active dry yeast (1 packet)

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon salt

For the Filling:

1/2 cup brown sugar

2 tablespoons cinnamon

1/4 cup coconut oil, softened

1/2 cup chopped walnuts or pecans (optional)

For the Icing:

1 cup powdered sugar

2 tablespoons almond milk (or any plant-based milk)

1 teaspoon vanilla extract

Instructions
 

Activate the Yeast: In a small bowl, combine the almond milk and maple syrup. Warm it slightly, then sprinkle the yeast over it. Let it sit for about 5 to 10 minutes, until it becomes frothy.

    Mix the Wet Ingredients: In a large mixing bowl, combine the mashed bananas, melted coconut oil, and vanilla extract. Once the yeast mixture is frothy, add it to the bowl along with the banana mixture.

      Combine the Dry Ingredients: In a separate bowl, whisk together 3 cups of flour, baking powder, and salt. Gradually add this to the wet ingredients, mixing until a dough forms.

        Knead the Dough: Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Add more flour as necessary to prevent stickiness.

          First Rise: Place the dough in a lightly greased bowl, cover it with a clean cloth or plastic wrap, and let it rise in a warm place for about 1 hour or until it has doubled in size.

            Prepare the Filling: In a small bowl, mix the brown sugar and cinnamon together. Set aside.

              Roll Out the Dough: Once the dough has risen, punch it down and roll it out into a rectangle about 1/4 inch thick on a floured surface.

                          Bake the Rolls: Bake the rolls for 25-30 minutes or until golden brown. Remove from the oven and allow them to cool slightly.

                            Prepare the Icing: In a small bowl, whisk together the powdered sugar, almond milk, and vanilla extract until smooth. Drizzle over the warm rolls.
