Ingredients

1 lb beef stew meat, cut into bite-sized pieces

1 tablespoon olive oil

1 large onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

2 ribs celery, chopped

2 medium potatoes, diced

1 cup green beans, chopped

1 can (14.5 oz) diced tomatoes, undrained

6 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions

Sear the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat and brown on all sides, about 5-7 minutes. This step adds depth of flavor to your soup.

Sauté Aromatics: Add the onion and garlic to the pot with the beef. Sauté until the onion becomes translucent, about 3-4 minutes, stirring occasionally to prevent burning.

Cook Vegetables: Add the carrots, celery, and potatoes to the pot. Stir to combine and then cook for another 5 minutes to allow the vegetables to soften slightly.

Combine Ingredients: Pour in the diced tomatoes (with their juice), beef broth, Worcestershire sauce, thyme, and rosemary. Stir everything together, scraping the bottom of the pot to release any browned bits.

Simmer: Bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 1.5 hours, stirring occasionally. This allows the flavors to meld and the beef to become tender.

Add Green Beans: In the final 15 minutes of cooking, stir in the chopped green beans. Taste and season with salt and pepper as needed.

Serve: Ladle the hot soup into bowls and garnish with freshly chopped parsley. Enjoy your hearty vegetable beef soup with some crusty bread!
