2 cups sushi rice

2 1/2 cups water

1/4 cup rice vinegar

2 tablespoons sugar

1 teaspoon salt

1 lb salmon fillet, skinless and chopped

1/3 cup mayonnaise (preferably Japanese Kewpie)

2 tablespoons sriracha (adjust for spice level)

1 tablespoon soy sauce

1 teaspoon sesame oil

1 avocado, sliced

1 sheet nori, cut into strips

Green onions, chopped (for garnish)

Togarashi seasoning (for garnish)

Instructions
 

Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer’s instructions.

    Season the Rice: Once cooked, transfer the rice to a large bowl. In a small saucepan, mix rice vinegar, sugar, and salt over low heat until dissolved. Pour this mixture over the rice and gently fold it in until well combined. Let cool.

      Make the Spicy Salmon: In a mixing bowl, combine the chopped salmon, mayonnaise, sriracha, soy sauce, and sesame oil. Mix until everything is evenly coated. Adjust heat with more sriracha if needed.

        Assemble the Bake: Preheat your oven to 375°F (190°C). In a baking dish, spread a layer of the seasoned sushi rice evenly on the bottom. Top with the spicy salmon mixture, spreading it out evenly.

          Bake: Place the dish in the preheated oven and bake for about 15-20 minutes, or until the top is slightly golden and bubbling.

            Serve: Remove from the oven and let it cool for a few minutes. Garnish with sliced avocado, chopped green onions, and a sprinkle of togarashi seasoning. Serve with nori strips for wrapping the sushi bake or enjoy it straight from the dish!
