Ingredients

4 large egg whites

1 cup granulated sugar

1/2 teaspoon cream of tartar

1 teaspoon vanilla extract

1/2 teaspoon cocoa powder

1/4 teaspoon salt

1 cup dark chocolate chips (for dipping)

Edible glitter or powdered sugar (optional, for decoration)

Instructions

Preheat the Oven: Preheat your oven to 200°F (95°C). Line a baking sheet with parchment paper.

Prepare the Meringue: In a clean, dry mixing bowl, beat the egg whites on medium speed until frothy. Add the cream of tartar and salt, and continue beating until soft peaks form.

Add Sugar: Gradually add the granulated sugar, one tablespoon at a time, while beating on high speed until the mixture becomes glossy and stiff peaks form. This should take about 5-7 minutes.

Flavor the Meringue: Gently fold in the vanilla extract and sift in the cocoa powder. This will give a light chocolate flavor that mimics the earthy tones of mushrooms.

Pipe the Mushrooms: Using a piping bag fitted with a round tip, pipe mushroom caps by making a small circular swirl with the meringue on the prepared baking sheet. For the stems, pipe small cylindrical shapes.

Bake the Meringues: Place the baking sheet in the preheated oven and bake for 1.5 to 2 hours until the meringues are completely dry to the touch and can lift off the parchment easily. Turn off the oven and let them cool completely inside for at least an hour.

Melt Chocolate: Once the meringues are cooled, melt the dark chocolate chips in a microwave-safe bowl or a double boiler until smooth.

Assemble the Mushrooms: Dip the tops of the mushroom caps into the melted chocolate to resemble the soil-like top of a mushroom. Allow the excess chocolate to drip off. Place the chocolate-dipped mushroom caps back on the parchment paper to set.

Decorate (Optional): Once the chocolate has set, you can dust the mushrooms with edible glitter or powdered sugar for a festive touch.

Serve: Arrange your Yule Log Meringue Mushrooms on a decorative platter and enjoy as a delightful holiday treat!
